• I'm trying to work out if I have PMS really bad or if this cake sounds AMAZING!! Will be interested to see if you get any replies :)
• Could you make like a round lemon drizzle cake, but instead of doing the drizzle icing just put glace icing on instead? Is that the one with the pretty feather pattern in brown on the top?

You could either put finely grated lemon rind in the cake or use lemon juice to make the icing. Both if you like a full-bore lemon hit!!

yes it is

though it is quite a fine sponge and i think only the icing is the lemon flavour

Ok... for a guess...

The cake is slightly denser than a standard sponge (which four ounces each of marge, sugar, and flour) plus egg and so on...

So I'd increase the flour to either six or even eight ounces.

The icing is simple glace icing which is:-

4 oz (100g) icing sugar

1 tbsp (15 mil) warm water.

Lemon flavouring.

Add water to the icing sugar and stir until smooth. Add the lemon essence.

If you want to go a step further I'd make milk chocolate icing to make patterns with (or just use melted chocolate). Use http://www.be-ro.co.uk/f_insp.htm and click on the link to icings on the right for the choc icing.

There's also basic instructions for a standard sponge there too (if you don't already know how) but as I say - I'd be inclined to increase the flour for this cake :)

• I used to buy that Lemon cake as well, but it didn't last long!

I've since been using this recipe

Lemon Cake
4 Eggs (whatever they weigh,is the weight you want of each of the following)
soft marg
SR flour
castor sugar

juice of 2 lemons + rind
Juice of 1 further lemon for topping + a little icing sugar

Method.
Line 7" cake tin
Cream marg and sugar, till pale and fluffy - almost white
Gently fold in the eggs, don't beat at this stage and don't worry if it looks lumpy
Fold in the flour
Add juice and rind of lemons - Now stir well

Put in oven GM6/220c for 15/20 mins till light and springy.
Take out of oven and cool on a wire rack.
mix juice of remaining lemon with icing sugar and spread over the top of cake.
• Lidi sell a full circle version of this cake costs around £1.30 ish. My children call it caravan cake as we always used to buy it from Lidls when we went to stop at Mablethorpe in a caravan. Even though we have a Lidl where we live it is still affectionatly known as 'caravan cake'
