I used to buy that Lemon cake as well, but it didn't last long!

I've since been using this recipe

    Lemon Cake
4 Eggs (whatever they weigh,is the weight you want of each of the following)
    soft marg
    SR flour
    castor sugar

juice of 2 lemons + rind
Juice of 1 further lemon for topping + a little icing sugar

    Method.
    Line 7" cake tin
Cream marg and sugar, till pale and fluffy - almost white
Gently fold in the eggs, don't beat at this stage and don't worry if it looks lumpy
    Fold in the flour
Add juice and rind of lemons - Now stir well

Put in oven GM6/220c for 15/20 mins till light and springy.
Take out of oven and cool on a wire rack.
mix juice of remaining lemon with icing sugar and spread over the top of cake.

thank you will give it a try at the weekend need to buy more lemons

Thanks for the recipe, its in the oven now. :T
Just have to nip out as I didnt have enough icing sugar so need to go get some more :)
One thing I would mention is that mine has been in the oven for the last 30 minutes and it still isnt done. Ovens vary so anyone planning on making this, just keep your eye on it and take it out when its done.
