Danish leftover dish - with a twist

Well last night we had a bunch of spuds left over from the night before that i wanted to use up so this is what I made:
"Brasede kartofler" - it's the danish equivalent i guess of bubble and squeak.
I took the spuds and chopped into small 1 to 2 cm cubes.
Fried 3 rashers of bacon left from the weekend with some chopped onion in a little butter. then added a red pepper that was looking a little sad, again chopped and a leek that again was a little floppy sliced up.
once that was cooked through i put them in a bowl, added butter to the pan and then browned the boiled spuds in the butter. once they are browned then i added a chopped tin of ham that i've been meaning to use up for ages and added the rest of the mix. stir well and serve!
ingredients list:
Boiled potatos
1 red pepper
1 leek
1 onion
3-4 rashers of bacon
1 small tin of ham
butter for frying
There was enough there for me, OH and lunch - well there would have been if OH didn't go back out at about 10pm and ate my lunch! grrrrr :rolleyes:

Last night I used up half a tin of corned beef, three bolied taters, half an onion, a sad carrot (grated) and did the same thing. I crumbled a stock cube over it (no liquid needed) just to give it a bit of extra oomph.
That was a good sized portion for one. So I'll leave the maths as a homework exercise for those of you cooking for more
