    Thanks everyone, I wondered if I could substitute the ground almonds with semolina as that would take up a lot of the liquid, as Nigella's recipe is very wet. what do you think

    Orange Cake

    1 cup sugar
    4 oz butter
    2 eggs
    1/4 cup orange juice
    1/4 cup milk
    1 tbsp orange rind
    1 1/2 cups SR Flour

    Cream butter & sugar, add rind & egg yolks, beat well. Add milk & flour alternately with orange juice. Fold in stiffly beaten egg whites. Pour into two 7" sponge tins. Bake for 30 mins in moderate oven.

    Fill with mock cream & ice with icing made with orange juice instead of milk.
    Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

    How about a carrot and orange cake?

    I am sure there would be (or you could adapt) a recipe out there that uses the juice in the frosting/icing and the rind in the body of the cake (or the other way around!)

    Tescos do a carrot and orange cake which is totally scrummy..I bet a homemade one would be even better.

    This is quite a refined orange cake. I made it with a blood orange which gave it a lovely flavour and a deep colour. The crunchy topping didn't quite work for me either but the cake had a delicious and delicate taste and texture.

    Hi,

    I'm about to make a cake from "Good Food 101 cakes and bakes" and the first part of the recipe says "put the orange in a pan, cover with cold water. Bring to the boil, cover and simmer for 1 hour".

    It doesn't say to peel the orange but says later in the instructions "Roughly chop the cooked orange, discard the pips. Wizz in the food processor until smooth" Still no mention of the skin :eek:.

    So my questions are.....

    Anyone made this before and do I peel the orange?

    Also would I be able to blend it with a stick blender? Just realised I need a food processor while I was typing lol.

    It means leave the skin on. The cooking and processing of the whole orange will mean all the flavour of the zest will be in the cake - it will be yum.
