Orange cake ???

Wonder if anyone can help ??

Hubby just announced he feels like Orange Cake :confused:

Of course me being the ever pleasing wife would love to bake him one but I don't even know if such a thing exsists !!! :p

I know if there is such a thing then you OS-er's will know about it !!! I have looked onthe recipe index under Oranges and Cake but cannotsee anything.

    It's really just a Victoria sandwhich recipe and you grate in the rind of an orange and maybe a little of the juice but the flavour comes from the rind.

    I wonder if you coud find a lemon cake recipe and substitute orange?
  • Victoria sponge with orange buttercream (finely grated rind in the cake mixture) or marmalade filling maybe. I like both versions!

    Or orange syrup cake (like lemon drizzle cake but made with orange rind and juice).

    Valencian Cake (serves 6-8)


    125g/4oz blanched almonds
    4 eggs, separated
    175g/6oz caster sugar
    Grated rind and juice of 3 oranges
    1 cinnamon stick, broken in half
    1 tbsp. orange liqueur (optional)

    Grease and line a 20cm/8” tin. Pound the almonds with a mortar and pestle until reduced to coarse crumbs. (Alternatively use either ground almonds or a mixture of ground and finely chopped almonds.

    Whisk the egg yolks and 125g/4oz sugar until thick, then stir in the orange rind and almonds. Using a clean whisk, whisk the egg whites until stiff but not dry. Fold one third of the egg whites into the almond mixture until just evenly mixed, then add the remaining egg whites in two batches in the same way. Spoon into the cake tin and bake in a preheated oven 180°C/350°F/Gas 4 for 45 minutes until golden and set in the centre. Do not worry in the cake rises and then deflates again. Leave to cool a little, then transfer to a deep serving plate.

    Heat the remaining sugar in the orange juice with the cinnamon stick, stirring until sugar has dissolved, then boil for a couple of minutes. Remove from the heat; add the liqueur if using then slowly pour the syrup over the entire top of the cake until it has all been absorbed.

    Have another good one somewhere, will try and find it!
