when cooking with lavender, err on the side of caution - the taste can be overpowering - you only want a hint of it!
Yes, it can be a little ' soapy'. We also always used to keep some dried lavender for tea. I seem to remember it was the colour and smell though that was easing rather than the taste as a tea. Which I remember as being somewhat tasteless. I love cooking with it it though.

Ooooo some great ideas. I tried fresh lavender heads in tea last night it went a strange colour but tasted ok. I will start drying them. I think I quite fancy it in cakes and I like the ideas of lavender sugar for soda yum.

I read that it's best to pick lavender for drying before the flowers are fully open and to pick them once the dew has dried on them but before noon, so that the maximum amount of aromatic oil is still in it. HTH.0
