Smoked fish what can i do with it?

    Thanks for all the ideas, i think i will try the fish with cream tonight i only have double cream in and mature cheddar will that be ok to use? also do you think the pasta dish recomended by adsk could be frozen after cooking.

    What kind of fish is it? I love smoked haddock & leek risotto and I've frozen leftovers of that before

    I tried a fab (and very easy) recipe from the Good Housekeeping cookbook last night. Two fillets of smoked haddock flaked and mixed with 200ml creme fraiche, 1 tbsp flour and some chopped parsley. Put a sheet of puff pastry on a baking tray, spoon the mix on one side and fold the other over to make a pie and press the edges together. Glaze the top with 1tbsp creme fraiche mixed with a little water and cook in a hot preheated oven for 20 mins. Served 2. It was fantastic! I imagine it would work with any fish, and was much easier than making a normal fish pie (only about 3 mins prep work and virtually no washing up!

    All of the above ideas are good, but my vote goes for fish pie. IMHO, at least one of the fish used should be smoked, to give that extra flavour.

    A tip: do the mashed potato first and let it cool. That way, it somehow stays separate from the fish & sauce layer in the oven.
    The acquisition of wealth is no longer the driving force in my life. :)

    double cream and mature cheddar should be fine- don't go OTT with the cheese though as it's a very rich dish. The puff pastry pie sounds like a brill idea too- might have to try that!

    Hi, I used the recipe from BBC Good Food Website, its the simplest one. I prefer veg stock to chicken, and I add onions and chopped garlic to the butter when softening the leeks.
    • 400g smoked haddock
    • olive oil
    • butter
    • 4 young leeks , halved lengthways and thinly sliced
    • 300g arborio rice or carnaroli rice
    • 1 glass dry white wine
    • chicken stock fresh, cube or concentrate, made up to 1.5litres, kept simmering
    • a small bunch of chive , snipped

    1. Put the haddock in a heatproof dish and just cover with boiling water. Cover with clingfilm and leave for 10 minutes. Flake into decent-sized chunks.
    2. Meanwhile, heat 2 tbsp oil and a knob of butter in a wide shallow pan then add the leeks. Cook slowly for 10 minutes until completely softened. Turn up the heat, add the rice and stir to coat the grains. Pour in the wine and stir until absorbed. Add the stock, a ladleful at a time, stirring each lot in, until the rice is just tender and creamy (you might not need to use all the stock). Stir in the haddock and chives and serve.

    I have eaten it after freezing and reheated in the microwave. Like all pasta after being frozen it becomes a little soggier than when it was freshly cooked but it was quite acceptable. To make it even nicer stick the reheated dish under the grill for a minute to revive the crunchy topping.
  • Hi all and thanks in advance!

    Did the shopping with the Mr yesterday and he's worse than the kids for putting things in the trolley!
    While I've not been looking he's got 2 large pieces of smoked cod from the deli counter that need using up today!!

    I'm not into smoked fish and normally cook any fish I get in the super simple tinfoil baking way (wrapped in foil, tbsp liquid and dab of butter, slice of lemon and herbs!)

    It normally works fine but will this work with smoked fish or is there a better way to cook it????

    Was planning to serve with jackets and salad or chips if hubby gets his way! so any ideas how I cook this??

    Make fish pie! Just cook the fish in milk then flake and make a white sauce, mix fish in - even better, chop some parsley and mix with fish and sauce. Cover with mashed potatoes and put in medium oven for 20 minutes or until potato top is browned (you can sprinkle cheese on top in the last 5 minutes to make even more golden). This is the simplest basic-est fish pie recipes and fairly quick too.
    Finally I'm an OAP and can travel free (in London at least!).
