Smoked fish what can i do with it?

My dad has some smoked fish going spare and asked me if i would have it (yummy stuff) problem is there are about 5 bits and it was frozen when he got it last night and i can't get it till tomorrow morning i will have a piece for tea probably done in milk in the oven but as i am the only person who eats it is there anything i can make with it and then freeze what i have made or will it have to be used straight away.

    What kind of fish is it? I love smoked haddock & leek risotto and I've frozen leftovers of that before

    throw it in the bin? put it back in the sea? (sorry fish makes me ill)
    How about addng some peas and a white sauce top with mash and make a fish pie

    Kedgeree? Rice, egg and smoked fish, just tossed in together and eaten hot or cold - I love it! Not sure if this is the typical recipe though - I just made a search and there are many mentions of kedgeree but no definite recipe given.
    Be careful who you open up to. Today it's ears, tomorrow it's mouth.

  • Fishcakes are nice made with smoked haddock. They can be frozen.

    I'm very fond of this recipe - tastes great & quite easy to make.

  • If it's smoked haddock or cod then put it in a shallow roasting dish, cover with cream and then grate some cheese over the top (any you like but half gruyere, half cheddar if you've got them is nice!) Bake in the oven 10 mins then put under the grill till bubbling and golden. If feeling particularly decadent then put some crispy grilled pancetta on top. serve with potatoes and green veg. The best smoked fisk recipe I've had for ages!

    Make it into a smoked fish mousse and have it on granary bread :)
  • sorry, just read that you wanted freezing ideas- you wouldn't be able to freeze the cream and cheese thing! only other suggestion is pate- you wouldn't be able to freeze it but you could keep it in the fridge for a couple of days!

    Potted smoked haddock (or cod etc)

    Cook and flake fish, mash with an equal quantity of soft butter. Add a squeeze of lemon juice and some black pepper. Store in the fridge, or freezer in small pots/ramequins/tubs. Use on toast or melted onto a baked potato, or forked through hot pasta.

    Smoked Fish Gratin

    Use smoked haddock/cod or salmon or mackerel. If using smoked haddock/cod cook it first and flake.

    Parboil some spuds, dice and layer with the smoked fish and some cream and grated cheese. Bake in the oven for 30-45 mins.
