If Sky have agreed you can leave penalty free then use the OTS service to switch to EE as fast as possible. Don't contact Sky again as it'll only confuse matters. Try and make sure you're getting the Amazon Eero router as it's far superior to the rubbish Sky Max Hub you've likely got.
I am a little puzzled by the figures you're throwing around though. Presumably you're on 300Mbps as you talk about 3 times the speed with EE (for 900Mbps). 300Mbps is not your guaranteed speed to the hub (note, this is not via wifi) but is 200Mbps I believe? WiFi is "guaranteed" at just 25Mbps per room but notably doesn't allow you to leave ETC (they'll try and get you to pay for their WiFi guarantee and if asked for, up to 3 extenders.

to be honest all i know is that sky have informed me that as the speed has dropped for three consecutive days in the last 30 days it’s triggered the ‘speed guarantee’ which means I can leave or change package with no penalties.

Could also mean that they've realised that there's some kind of infrastructure issue and they'd really like you to make it another provider's problem…

Or you switch and the problem is resolved because it was on Skys backhaul, so it never becomes an issue for another provider because the new provider doesn’t have a backhaul problem.
