Should a Beko Fridge Freezer Reach Minus 18 on Setting 3?

That's not the OP's problem.
OP's problem could be the opposite of this. Their freezer is half full of "tubs of ice" which have a relatively high heat capacity. The freezer's going to have to run for expended periods trying to cool them from -10 to -18, which might be what's causing the fridge to ice.
Hopefully OP will find a thermostat setting where he can leave everything alone for a week or so and the fridge-freezer will reach a steady state.

If you put the thermometer in water you can take it out of the fridge to read and the temperature won't change as quickly as it would just in the air.
Tall, dark & handsome. Well two out of three ain't bad.2 -
There are plenty of digital thermometers available on Amazon for less than a fiver that can sit on a shelf and read without disturbing them.
