When you get on the aeroplane, take your SIM out. When you land activate your eSIM and then turn off Data or Data Roaming. Replace your home SIM and then choose the eSIM as your Primary. and set whatever other options that may be possible. When done, you can switch Data Roaming and Data back on.

If you can set your spend cap to zero you will not be able to incur any roaming charges

In this particular case, the OP wants to be able use calls and texts. If they aren't included in their plan then they'll need to set the spend cap higher than 0.00
Its worth mentioning that networks point out that a spend cap, can't stop all roaming charges. This is because of the way roaming works in some countries.
