a possibility, they didn't mention any discounts at the time of booking.

It's possible the hotel doesn't allow any changes to certain bookings, in which case to change the occupants of a room you'd need to cancel and rebook.

Emirates Holidays T&Cs, changes are covered in section 7: Emirates Holidays Booking Terms & Conditions

Charges in the event of a change

In the event we can meet your requested change, changes will be subject to an administration charge of £35 per person per change as well as any applicable rate changes or extra costs or charges imposed by any of our suppliers and/or incurred by us.

It's not uncommon for holidays (or elements of them) to be repriced when an amendment is made, and that seems to be what's happened here. Hotel rate has gone up between when you booked and when you amended.

After speaking to Emirates again, the room was cancelled and re-booked due to the type of contract they have with Mina Salaam! Do I just put up with that?

i could understand if the people were completely new passengers, but they're not.

It sounds like Emirates are honouring their contractural agreement with the hotel.

Not sure there is a way around that ?

Unless your Ts&Cs have a different option.
