We've had the same issue, A2W would cost £10k+ even after grant as we had no radiators so all the plumbing drives costs up a lot.
Your hot water costs are relatively small <£300 a year. Probably easiest thing is to put £7000 to ISA and use interests to pay for it. When gas system gets to its end of life - replace it with A2W heat pump. Simple :)

It's mainly the large upfront costs that put me off A2W; the requirement for a new hot water cylinder and additional pipework to plumb it to the heat pump.
Cooling would be most beneficial upstairs in the bedrooms to make sleeping and working from home more comfortable.
