Leftovers......

Im absolutely rubbish with them!! Now im ok with leftover macaroni cheese or lasagne and things like that cos I just reheat and have them for supper or lunch, but actually using then to make a new meal ... I just dont have the food imagination I suppose. I usually put things in the fridge intending to use them but end up chucking them out when they go off ..... not very moneysaving is it? At the moment ive got about 1 1/2 servings of mashed potato in the fridge. What can I recycle them into? Ive not got enough for shepherds pie!! Also, any tips on other common leftovers (like 1 sausage that nobody can manage etc??)

Use your freezer to store leftovers until you have a use for them.

If at all possible, stick it in a sandwich! Perfect solution for your sausage. As for the mash - mix it with some cheese and maybe a handful of peas or sweetcorn, and make veggie burgers. If you're not vegetarian, mix with a small tin of tuna and make a snack lunch.

Bubble and Squeak to use up the potato? Add some cooked cabbage and some onion if you like to the cold potato, mix well, lots of pepper and either plonk it all in a frying pan or shape into burger shapes and fry like that. Lovely with ketchup and a fried egg.0

Mashed potato...? Fish cakes.
Easy peasy
Or whizz into a soup to give it some body. Coat rolls of it in breadcrumbs and lightly fry (you know - those whatdoyercall'ems)...
And if all else fails - scour our recipe index for inspiration... or simply join the recipe thread and search on "potato" or "mashed"...
Most veggie leftovers can get added into pretty much any soup you like (whizzed or not)...

Odd n sods of mash can be used up in pastry (I'll post a recipe tomorrow)
Or made into a fish cake
Bubble n Squeak (bit of left over veg mixed in and fried until crisp)
Stretched with grated cheese, grated onion and made into Cheese, Onion and Potato Pie (no pastry, just all mixed together and reheated in the oven)
Added to hm soup/casserole to thicken.
L/O sausage = sliced and put in an omelette; sandwich; rolled up in a tortilla flatbread with salad; rolled up in a pancake.
Chop into pieces, add to a basic tomato pasta sauce and pour over hot pasta. Chop into slices and add to a hm pizza as part of the topping.
Chop into dice, add to your l/o mash, and fry as a sausage potato cake (add extra's such as onion, herbs).~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

oooohhhhh I love that! I mix mash with tuna, a squirt of lemon and loads of black pepper. Flour lightly and fry until golden. serve with lemon wedges and a bit of mayo :drool:Just run, run and keep on running!0 -

Do you mean croquetts (dodgy spelling!) ive not had them since I was a kid and my mum gave us the awful frozen ones. Bet I could do them homemade much better

Most things can be mixed together somehow & called a pie! Leftover meat & veg for example can be chopped up, mixed with HM white sauce, & poured into a pastry case.
Or put the mixture into a pie dish & top with pastry, or breadcrumbs & grated cheese, or of course, mashed potato.
A variation on Queenie's Cheese, Onion & Potato pie is to add a layer or 2 of baked beans for extra protein value.
