I collected about 15 packs of carrot batons in my evening Olio, and cannot distribute them because they are "use by". What genius ways have you got to cook, preserve, serve, use carrot batons so I can get them all processed into something or other tomorrow?!
Thanks for any thoughts you can provide!

mash it, portion up and pop in the freezer. i ended up with 15 loaves of bread through olio recently, so i breadcrumbed the lot and froze!! anyone that comes to visit now gets a farewell bag of breadcrumbs!

You can always blanch and freeze some of the packets for later. Do you have a metal colander? Boil a saucepan of water, put the buttons into the colander and dunk it in the boiling water for 10 seconds. Scatter onto a tray to dry and then freeze once the steam stops.
Use some of the batons in a stir fry. Also, try making Carrot & Cashew Nut Roast (which can be frozen uncooked). Mine is a version of a Rose Elliott recipe (hers is Carrot & Hazelnut), but there are plenty of recipes available on the internet that can be adapted. (In the food-processor combine 2 large carrots, 150-200g nuts, 2-3 slices of bread, a teaspoon of soy sauce, 1 teaspoonful of mixed herbs, and 1 egg. Blend until smooth-ish. Bake in a loaf pan for 45-50 minutes at 200c.)
