    For those interested, so far I've made a large batch of soup, have the beginnings of maple carrot granola going, am making carrot and halloumi rosti for dinner, and am planning on carrot and coconut tray bake if I can find the right size tin!

    I make it easier and skip the blanching. That way you have the option to use as a boiled or roasted veg in the future or even thaw enough to chop down to put in your casseroles/soup/mash.

    Normally when I buy carrots for whatever only half of them make it into the dish as I eat so many just plain. OH looks at the small pile of carrots being served at dinner and asks if I actually bought a bag or just one carrot.

    Grate carrots and use in muffins. My favorite. Ate 6 in one sitting once.

    Use the grated carrots mixed with raisins and mayo for a salad (my mother did this a lot).

    Can grate and freeze the carrots in packets ready to go.

    Not sure grating batons is feasible really; it's great with whole carrots but don't think I'd want to try with batons!

    I have a grater that is glass and has a top with the grater in it and I just turn the handle. The batons fit in it pretty well. A plain grater might take awhile but it you had a blender or other tool, it is easy to grate. Or just chop them up in pieces to use like chocolate chips in muffins.

    I'd forgotten about that type of grater. Used to have one like that years ago until it got broken and never replaced1

    I ‘grate’ mine in my mini chopper. Actually I’m impressed at getting anything useful from olio. I tried it for a while but only ever got pastries, so gave up.

    Sorry to be late to comment, I didn't see this thread until a moment ago.

    These are two of my favourite carrot recipes

    Lime & poppy seed slaw with curry leaf oil | Ottolenghi Recipes - the carrots are julienned so your batons will give you a head start here and I do the cabbage in the food processor. If you don't fancy doing the spiced nuts you could just add a few raw walnuts or peanuts if you have them or leave them out altogether.

    Braised chickpeas with carrots, dates and feta | Ottolenghi - I've successfully done the oven stage of this recipe in the slow cooker on high for about 4 hours with approximately 2/3rds of the liquid given in the ingredients list and it doesn't have to be feta any tangy cheese you like will do.

    Then there is also this lovely soda bread which tastes delicious the first day and then toasts beautifully on the following days

    Quick Carrot And Walnut Bread Recipe | olivemagazine - where the method says "Tip onto a floured surface and shape" put it straight onto your baking paper or baking sheet otherwise you can spoil the lovely shape you've made when you move it.
