2 parking tickets

I have 2 parking tickets
One of them I was the driver but a medical issue arised with the person I was with and I accompanied them to A&E
I missed initial letters so I disclosed this to Gladstones with evidence but they disregarded the whole thing
Still told me they would issue a parking fine.
I was a little confused with the dates but the second PCN I was not the driver
I missed the initial reply for this one too as both PCN are just days apart and I was away.
the thing is I was in town but not that day
It was someone else which I hadn’t realised at the time
I sent them evidence of my purchases for the next day and where I was that day with photos but again they disregarded the whole thing.
I’ve read through all these threads but I was wondering apart from the above points shat else can I include in my testimony

Realistically how long will it take for court papers?

You have two PCNs (notice to keeper?) You have appealed them? Have you received letter before/of claim? Have you received a N1SDT claim form?

Which parking firm?
The fact you weren't driving isn't a defence in most cases but that is NOT to say it is to be paid.

It’s Gladstones.
They told me they would be filing for court papers but I haven’t received anything yet.
I missed the initial letters from the company then the case was escalated to Gladstones.
They said it was too late to appeal and the company did not want to accept any appeal.
I tried to see who owned the car park but it’s owned privately by a family with no means of contact.

Even if you reached out and showed them evidence but they disregard it?I shared the evidence with Gladstones as I missed the opportunity to appeal with the parking firm.
They said they spoke to them but the fine still needs to be paid.

Parallel parking
Since I haven’t received the form from the courts yet I thought I’d best start working on a statement anyway so I’m ready for when it finally comes. I understand from reading this forum you have 30 days to prepare but I’d rather prepare from now.
In the first notice to keeper I have legitimate reason for the car staying in the car park. Medical emergency.
Apart from that what else can I add? If there’s a similar template on here I haven’t seen it. If someone can point me in the right direction.
And for the second PCN I wasn’t the driver but they’re pursuing me anyway so what else can I add to that one? Do I need to point out weak spots in car park lack of lighting, one pay point. The PCN using the time the car pulled in to car park not the time the ticket was paid etc. or just leave that as I wasn’t the driver?
If there’s a template I can edit for the second one too? I haven’t come across any with similar situations.

Sorry to be a bother
So I was doing more research and since I don’t have specific details of the landowner and I dont recall receiving the initial letter of NTK with the discounted rates within 14 days, is it wise to request a SAR asking the following
1.All photographic evidence captured by ANPR
2. The initial NTK and the certificate of posting or dated audit trail showing when this was sent.
3. Full log of correspondence sent to the address.
4. A copy of contract with landowner authorising to issue charges and pursue legal action at that site.
