Let's see what's in the old fitting.
If push-fit, you should be able to replicate it. I suspect the earth wires will separate at their ends, so they can be pushed into individual terminals.
The instructions for the new fittings should explain how to release the wires.

Is the power fully off? You won't need them lit until swapped?
By all means prise them out and have them dangling to save a little time.
With power off at your CU, it would be worth popping one cover open to see how it's wired inside? Assuming they are push-fit wires, practice removing one. I'm expecting it's going to be literally seconds for each one, in which case I'd probably swap them one at a time when the new ones arrive.
There's a chance that having wires touch, even with the breaker off at the CU, will trip the main RCD switch and shut off your whole CU and house! Can make you jump :-) But harmless. So, I'd do one at a time so as not to have lots of bare wires dangling.

Yeh we’ll do one at a time, they probably won’t arrive until Tuesday. We’re going to paint the ceiling tomorrow, might as well do the whole job!

new ones have arrived, gone for Ansell ones again, how do we know what side to fit loop in or loop out, do the 6 wires have to go in the exact terminal or any (as long as live, neutral, earth) etc

new connectors. The ‘end of the loop’ light only has one cable so which side of the new connectors should be used? Do the two cable ones need to be in specific left or right connectors?

As I understand it, the blues, greens and browns are all joined together. I mean green&green, blue&blue etc.
So, for loop-in (actually 'daisy-chain') it doesn't matter which green or blue or brown you use as long as it's the correct colour, but it makes sense to fit one cable to one side, and t'other to t'other.
The only practical issue appears to be the green 'earth' wires - they should be separated once unscrewed from the existing fitting, and sleeving added to the now-bare one so they are both individually covered, and then fit them in their respective terminals. You'll need extra sleeving for this, but it's just a quid or so at Wickes or B&Q and places.
For the end fitting it shouldn't matter which of the green, blue or brown terminals you use, but it makes tidy sense for one 'side' to be employed, leaving the other side empty.
Read how these terminals work - they look like press-down? Cooool. Also check how you undo them, just in case you are colourblind…
