Easyjet Holidays Last Minute Cancellation

We were due to travel to Amsterdam on Sunday for a few days away with Easyjet Holidays.
20 mins before we were due to board our flight it was cancelled and chaos ensued !!!!
I was half expecting it, due to the ongoing problems at Schipol Airport.
Surely Easyjet should have known it was going to be cancelled, as KLM had already cancelled their's before we travelled to the airport, but according to the Easyjet App, we were still going.
Obviously we will get refunded for the holiday but what are my chances of getting back my expenses eg. travel costs, breakfast and a couple of pints which I would not have purchased if I was informed in good time like KLM passengers.
Looking at their website, beer is not refundable when most people have one as way of calming nerves prior to flying!!!
Surely under the circumstances, they can cover a beer or two for the inconvenience.
I have submitted receipts etc and now they have asked for bank statements too. Is this their normal policy or are they trying to wear me down !!!

Not sure about the bank statement request, is this to validate what you'd paid out (if anything was unreceipted) or as a precursor to refunding to that account perhaps?0 -

Food depends on how long you were there, but wouldn't necessarily be covered as you could have eaten at home. Even it if was, alcohol is a choice and would likely never be covered.0
