Also bear in mind that converting the garage to a kitchen would remove the only access to the rear without going through the house.
When we did ours, the extension was narrower than the garage to leave a narrow passageway down the outside,
However looking at the OPs picture again, our garage was wider than theirs.
We did similar - left a passageway wide enough for a person to get through with a wheelie bin or wheelbarrow.

Yikes, for those costs it probably makes sense to just do a rear extension and leave the garage as is
It may well make sense. The key thing is: I wouldn't expect that converting this garage would save you any money really. Adding the same footprint at the side or the back will cost a similar amount, so the best option will depend on what layout you want to end up with. Would a rear extension leave you with some dark middle rooms with no windows?

I am  very glad we did not try to convert the garage, as it was also not that great.
The side extension has really opened up the hallway and added an extra useful room. Definitely a positive point if we ever sell, especially as it has all the relevant paperwork.
The only thing I would say is that building costs have shot up more than inflation,( especially since Covid) and therefore regaining the outlay when selling is more difficult than it used to be.
