Using eSIM on my phone for SO's banking apps and my physical SIM for my banking apps

I'm hoping someone with a good knowledge about eSIMs might be able to help — my SO lost their phone a few weeks back, and it was a total nightmare... New phone now, so all is good.
BUT as I'm the one who does both mine and their banking online and using apps, would it be possible to put their mobile phone number on my phone that has (I've just discovered!) an eSIM 'port' (?)? So, for example, let's say we both bank with HSBC, and I look after the money management of both accounts. Would I be able to use the HSBC app for TWO different mobile numbers on my iPhone, for mine and their HSBC banking?
Am I living in cloud-cuckoo land? Am I even making sense?!

This won't work for various reasons.
Putting their phone number on your phone (via physical or eSIM) will mean their phone has no number.
Also, banking apps don't just use the phone number to verify a customer, but also verify the phone using it's serial number, a token in the secure enclave and firmware version. (Most banks will detect you doing this)
Also, not every phone will allow you to have two copies of the same app.
Also, banks would prefer that your SO added you to the account so that you can do this without pretending to be them. In which case the account will show up in your app without needing to use tricks.4 -
