I have some gammon steaks in the freezer, and have found the recipes on here for gammon with coke (or cherry coke) done in the slow cooker. I have a slow cooker but only diet coke (no good apparently) - BUT I do have a can of soon-to-be-out-of-date Waitrose ginger beer (full sugar version). Will this work instead?
We both like ginger a lot so am tempted to try this - but not if I am going to ruin 2 nice thick gammon steaks!
Anyone tried this or think it's worth the risk?

If the ginger beer is the full sugar version as you say, then I can't see how it could technically fail - I've had a sauce containing stem ginger with gammon before, so I think it would work.

Nigella did a gammon roast on her Christmas programme, but it is not in her Nigella Express book.
She boiled the gammon in ginger beer ... not sure what else she used in it.
She then cut off the skin and rubbed the fat with a mix of cumin, ginger and other spices (and demmerera sugar I think)though I can't remember exactly what.
Oddly enough, I am just about to try doing a small 750gram gammon roast and going to try to do adapt the above with a bit of guesswork.

I did Nigella's recipe, cooked the gammon joint in ginger beer, ( has to be full sugar version) removed the skin then glazed the top before putting in the oven to bake.
The glaze was 1 cup stem ginger in syrup ( or use orange marmalade and ground ginger) if you don't have the stem ginger
2 tbsp english mustard
1/2 cup of dark brown soft sugar
Just mix it all up and spread on joint, bake for 20 minutes

I've never thought of using ginger beer, I've only tried coke before, but it sounds delicious.

i did the recipe in the link that pinkwinged has given. i would do it again but only put in 1/2 the amount of cloves i thought it overpowered the ginger to much.
i also didn't boil it as long but did it longer in the oven

I cooked a ham at christmas in dry ginger ale and it was absolutely delicious!!!!! Sort of a cross between Nigella and Phil Vickery's hams.
I put the ham in a pot of cold water and brought it to the boil then discarded the water to get rid of the salty scum that usually comes off. Then I roughly chopped a leek, 2 sticks celery, an onion and 2 small carrots and put those in the pot around the meat, along with 3-4 bay leaves and a few peppercorns and poured over a 1litre bottle of dry ginger ale.
Simmered the pot for about 3 hrs (2.5kg joint) then switched off and left to cool in the liquor. Removed meat from pot, sliced off the skin then poured over a sticky ginger glaze made with chunky ginger marmalade, honey, mustard powder and ground cloves and roasted at 200C for about 25mins :drool:
PS just ate the last of it last night and it was still as succulent and delicious as when I made it on xmas eve :drool:“You can please some of the people some of the time, all of the people some of the time, some of the people all of the time, but you can never please all of the people all of the time.”0
