Just to let you know I tried this over the weekend, and it was delish - the gammon was so tender it hardly needed cutting, and didn't taste salty at all but had a tang of ginger that was very moreish. I think I will definitely be doing this one again!
Thanks everyone for your help.

did this on christmas day (well cooked and glazed it on christmas eve then gave it a blast in the oven on the day) - was very well received indeed, ate all the leftovers and i'd go so far as to say i liked it more than the coke version. :T :jTrying to be good, not always succeeding. :A:beer:0

Hi Victoria,
Welcome to MSE :hello:
Is this the recipe you're looking for? Nigella's ham in ginger ale
Pink0 -
I tried Nigella's latest xmas ham recipe today and have to say that it's the best I've ever tasted yet
Placed the ham in roughly 1pt red wine to 3 pts water and added peppercorns, fennel seeds, crushed garlic, star anise, quartered onion and couple sticks celery. I think she added a fresh fennel too but I didn't have one. Simmered for 3 hrs.
Sliced off the skin once cool and scored the fat. Made up a glaze of cranberry sauce (HM) smoked paprika, cinnamon and a splash of red wine vinegar. Baked at 200C for 45mins.“You can please some of the people some of the time, all of the people some of the time, some of the people all of the time, but you can never please all of the people all of the time.”0
