First don't store in plastic. It can get condensation inside.
Legal places use quality brown envelopes.

Having worked in probate it's best to collate accounts so you don't have lots of small amounts in old accounts. Keep it simple.
Having the name and numbers of accounts is helpful to. Fuel, insurance etc just noted with account numbers can be on one sheet of paper and kept easily.
Financial is the only one to be kept secure.
The biggest holdups are chasing multiple accounts and waiting for replies.

Fireproof is a good idea. If you have a will stored with a solicitor they may agree to store them in their fire and flood proof safe.. They will get them out for you if you need to change anything.

I can rise and shine - just not at the same time!

The only normal people you know are the ones you don’t know very well

Having done three probates as executor and helped on a fourth, I found my Dad's hand-written notes, including account numbers etc. very helpful. I have compiled a record similarly for my affairs and told my executor where it is.  I update it regularly as accounts get added/deleted.  It is only one side of A4 and the master copy I kept in a fireproof deed box - not a safe.  One thing I did add was the telephone numbers of bereavement departments; it is easier to get the information in a state of calm before you need them!

Had the same issue. Literally all of my certificates for work lived in a box. Then all my insurance lives in emails and platforms. Not the most organised and so a lot of stuff regularly expired (email search = uselss. Really difficult for me to track.
Now use a site called mycerthub.io.
I can upload either via email, from computer or take a photo and it pretty much does everything else (notifications that docs are expiring etc). It also allows me to share them really easily with password protection and QR codes via wallets.
    Might be worth a look.
