Would someone have a good recipe for Jollof rice please?
I know there are eleventy billion out there but that just makes it harder to know what's a good one!!

Nigerian Jollof Rice.FOUR CUPS OF RICE-Wash and soak rice in boiled water for about 30 minutes.-BLEND1 large red pepper1 medium onion3 to 4 mushrooms of choice (optional)FRY FIRST1/4 cup oil of choice (mild flavour) add1 very large 😋 onion chopped, fry until almost caramelised (adds sweetness) add1 tube tomato paste and fry on low heat until it separates, add herbs and spices of choice, e.g.ThymeCumin powderBay leafCoriander powderAdd blended ingredients and fry for about 10 minutes.Season to tasteAdd 2 cups of water or just enough to cover the rice.Bring to a boil and turn down the heat. The steam cooks it gently.1
