Jollof rice recipe?

Would someone have a good recipe for Jollof rice please?
I know there are eleventy billion out there but that just makes it harder to know what's a good one!!

    Nigerian Jollof Rice. 

    FOUR CUPS OF RICE 
    -Wash and soak rice in boiled water for about 30 minutes.

    -BLEND
    1 large red pepper 
    1 medium onion 
    3 to 4 mushrooms  of choice (optional)

    FRY FIRST 
    1/4 cup oil of choice (mild flavour) add 
    1 very large 😋 onion chopped, fry until almost caramelised (adds sweetness) add 
    1 tube tomato paste and fry on low heat until it separates, add herbs and spices of choice, e.g.
    Thyme 
    Cumin powder 
    Bay leaf
    Coriander powder 

    Add blended ingredients and fry for about 10 minutes.
    Season to taste 

    Add 2 cups of water or just enough to cover the rice. 
    Bring to a boil and turn down the heat. The steam cooks it gently.
