Yes you are entitled to a refund, or at least you would have been if you had taken the item back to the shop (unless they specifically waived that in the reply you did get).
Theoretically you could sue but honestly...........

I agree they should have apologised etc but - stuff happens.

It's been almost 2 months and Ole & Steen haven't got back to me with the result of their investigation. It's just simply annoying that they ignoring the fact they feed me plastic!
Anyway, shall I just leave it or there are Consumer Rights to hit them back with?
Reporting it to your EHO won't help you getting your money back. It's between you and the shop you bought from0 -
Poor communication from the bakery but nothing to be gained by trying to take it further. Without the original product there is no actual proof. We all know how easy it is to fake photo's these days, but note I'm not suggesting the OP has faked anything.0

The investigation isn't really to do with you. It is to determine what happened, why it happened and what should be done to prevent that or similar incidents happening in the future.
It is likely to contain commercially sensitive or personal information as well as technical stuff which would mean nothing to you.
One possible explanation of a blue object in a bakery is that it was a blue first-aid plaster. Food premises must use such plasters. Perhaps it came off a worker's finger and got kneaded into the dough where it could not be seen.
Blue plasters can be detected with a scanner. One outcome of the investigation might be to buy a scanner so that baked goods can be scanned before they go into the oven. Or the bakery might already have a scanner and need to review their working procedures.2
