That's a mess.
I'd be tempted to contact DVLA to explain what's happened and see if they can do anything to stop the V5 transferring to a defunct company. The cars probably stuck there unless you can get the keys or provide sufficient paperwork to get a locksmith to get you access.1 -

We do not know the company is defunct. If it is, then the car is still an asset of the company, and the administrators will be dealing with it. But the OP's OH is an unsecured creditor - if there's £4k of debt to the OH, and £100k to the taxman etc, the OH will get precisely £0.00 of it, because HMRC are a priority creditor.0 -
