Not really - EasyJet were obliged to offer the passenger a choice between a rebooking or a refund, so it sounds like they failed to do this and simply took the easiest/cheapest option. You agreed to the excess when you took out the policy, so the insurer are not at fault although I would be scouring the terms and conditions very carefully about the double excess if you took out a joint insurance policy. Did you, or did you each insure separately?
The airline have have no responsibility for consequential loss.0
