PCN AT KFC HALL GREEN BIRMINGHAM FOR CHARGING MY EV

I recently received a PCN for parking at the KFC car park in Hall Green, Birmingham. I’m not from the area and had simply asked Google Maps to direct me to the nearest EV charging point during a 200-mile journey home. I left my vehicle to charge and went to find somewhere to eat. I was away for approximately 3 hours to allow my car to fully charge. I also hold a Blue Badge, which was clearly displayed at the time and due to my mobility issues, it takes me longer than average to return to my vehicle. Apparently there is a 90 minute parking limit sign there but I genuinely did not see it. There was no time limit specified on the EV charging station, though.
A few days ago, I received a County Court claim letter from the Civil National Business Centre (CNBC) in relation to this PCN. I would be very grateful for any advice on how best to respond. I have just 9 days left to respond
