I've been trying to find out how to log out of my Gmail account on my phone but it seems it's not possible as it would delete the account?  I thought you should be able to log in and out when necessary.  Am useless with technology 🙄

    You can't log out as such, only remove the account from your device.
    This will also remove your Google contacts, calendar and other data associated with that account, as well as access to all Google services such as Play Store, Drive, Docs, Photos, etc etc.
    All of the above isn't 'deleted' from the account and would be reinstated once you sign back in.

    If you're using Android I would think you can log out or at least remove the data that's used to keep logged in.

    Go to Settings then Apps scroll down to Gmail and press Force stop then clcik on the Storage section above and then press Clear cache and Clear data.

    That won't log you out of Gmail and by clearing storage all that will do is clear all of the settings so you would have to set everything up from scratch when you next came to use it.
    There is an alternative through the same route to disable the app but that isn't the same as logging you out.

    An Android phone really only works if you are logged into Google account.
    Is it just the G-mail you wish to log out of, or Google altogether?
    What is the objective you are hoping to achieve?  That might assist with identifying a solution.

    It's correct the Android gmail app doesn't have a 'logoff' menu option; as long as the Android phone is linked to a Google account, the gmail app will automatically use that one.

    can you not just go to settings, accounts, manage accounts. Then select the (gmail) account you want to remove and choose 'remove'

    Assuming the account is linked to other Google services, as I mentioned in my original response there'll be no access to the Play Store, Drive, Docs or whatever on the phone. 
    The alternative would be to disable the Gmail app and still have access to those.

    The OP really needs to explain what they are actually trying to achieve, and why they want to log out of the gmail account.

    Until we know what they actually want to do, it's unlikely anything we have to say will be of help.

    My partner sometimes uses my phone and I didn't want him possibly reading my emails.  Had an outlook account on laptop that you could log in and out of so assumed it was possible with Gmail.  Not very security conscious are they.

    Well, yes they are. Phones are protected by biometric logins and lots of other security features such as theft detection and remote wiping. How's your partner able to access your phone - inputting your pin?

    Perhaps your brand of phone implements multiple profiles, this might be what you want to use: https://www.google.com/search?q=multiple+profiles+android+phone

    Alternatively, delete all your emails and stop using that account, you can sign up with a non google email service
