Changing flights with Ryanair

Due to a fire damaging the property hubby's holiday booking in France has been cancelled at short notice.
He cant find alternative accommodation as it is an exclusive fishing holiday and there is no availability till the following week.
Flights were booked separately with Ryanair. We have looked into changing the flight but the website is very confusing. It gives a price for changing flights.
Then there are prices for if you add a bag, or choose a seat etc.
I presume that if you want to change a flight your choice of bags, seats etc do not transfer to the new flight?
If they do then its just the difference in flight costs and the admin fee you incur but if they dont then its cheaper to star again and just book a flight the following week.
Am I reading that correctly. I cant call them and ask as if you change the flight yourself online its £45 each way pp, but if you ask them a question the price goes up!
Has anyone changed a flight and can confirm if you do have to pay all the separate charges as well as the new flight price and admin fee?

I have not personally changed a Ryanair flight however my understanding is that you will pay the admin fee (£45 per flight online or £60 per flight phone/airport) plus any difference in fare. The booking should then move over to the new flight...bags and all (although I suspect may have to re-select a seat in the same price band if the original not available)
Before doing this it is worth comparing the costs with abandoning the current ticket and starting from scratch with a new ticket...although as you mention baggage and seats it may be cheaper to change (without baggage it often cheaper to buy new)0 -
I used the "chat" on the Ryanair website the other day and it worked remarkably well.0
