If you check in at the LH hotel but don't occupy the room surely that would be quite quickly flagged up as a no show ?

    How?
A hotel has been booked as part of a package and paid for by the package holiday company.
A guest turns up, checks in and takes the key.
The guest is very tidy so does not make any mess in the room, but takes the tiny shampoo and shower gel every morning, and eats the pillow chocolate (carefully throwing the wrapper in the bin).
Housekeeping will think it is odd, but I doubt anything more.
The hotel would simply not know that the guest is staying in another hotel along the promenade.  The hotel won't know that the guest won't turn up at any time.
Even if the hotel worked it out, they'd probably do nothing other than theorise various conspiracies about what the guest is doing...

Do not think the complete lack of clothes and any personal effects would be a little bit of a giveaway?
Whether the hotel will care is a different matter, but they will notice.
All shall be well, and all shall be well, and all manner of things shall be well.

Pedant alert - it's could have, not could of.

Yes, but it will be Housekeeping that will notice.
Would Housekeeping report the oddity any further?
I suspect that Housekeeping will simply run ideas about where the guest is - maybe got "lucky" and staying somewhere, maybe abducted by aliens, whatever.
Even if Housekeeping report it back to Front Desk / Management, what will the hotel do?  If a room has been paid for and the guest arrived, checked in and collected the key, the room cannot be re-sold as the guest might arrive to take up / resume occupancy at any time in the scheduled stay.

Maybe I've missed something in the discussion - the OP would also have to pay for the alternative hotel ?
That aside - if a guest is noticed as not in the accommodation 24/7 over a few days that would presumably ring alarm bells with the hotel management in case they have (God forbid) been victims of any criminal behaviour or misfortune ?
The hotel will have a policy I would suggest of reporting such to the local police - doing nothing would not be an option IMO.

You say you have purchased a holiday in July to Turkey
But now want a holiday in December in Lanzarote.
    Is that so?

The airline seat and hotel room were purchased by LH at the prices available at your time of booking.

A different country, hotel and flights will need to be purchased.again at the prices available when you decide to do so.

You can't pay for a flight to one place and transfer the cost for a flight to another. That's not how 3rd party booking companies work. You buy a package not the independent elements.

Well, yes, that is what would happen here.

The OP booked a package holiday in the summer to Turkey.
The OP wants to change it to a holiday in the winter to Lanzarotte.
Apparently, the OP can make that change and the package holiday company are happy with it.
Unfortunately, the OP wants a specific hotel in Lanzarotte that the package holiday company cannot offer.
The package holiday company will not allow the OP to change the flights unless they also change the hotel to suit.
The OP does not want to lose the value of the flights but it is only the flights they really now want as they want to stay at a specific hotel in Lanzarotte.

So, my suggestion was, to transfer the whole holiday to Lanzarotte in the winter, so change the flights and the hotel.
Then also book the hotel the OP actually wants to stay at.
So, yes, the OP would have the hotel and flights from the package holiday (all swapped to Lanzarotte) and also the hotel they actually want in Lanzarotte.  Which hotel the OP has as part of the package holiday is unimportant, but the best choice might be the hotel with the best pillow chocolates and miniature toiletries.

I was also surprised that LH were happy to change a holiday from Turkey in the summer to Lanzarotte in the winter but, maybe, the flights and hotel for the winter holiday are cheaper than for the summer holiday so perhaps the swap is a "win" for LH?

OP hasnt returned but from my understanding LH are not allowing him to cancel/transfer
if OP cancels the hotel part LH will cancel the whole holiday
On the FAQ LH would allow changes but only mentions between hotels not between countries, that would be a whole new package

Its more of a case of the OP wanting to have their cake and eat it
