One last question on this... I did not receive a copy of the claimant's DQ / N180. Could I put a paragraph into my witness statement requesting that the case be dismissed on these grounds?0

Nope, that won't gain any traction.
But looking at the tariff board I'd be majoring on no contract. Yes there are small print signs elsewhere, but they aren't at the payment machine where people will directly go to, and not very visible in the dark. There isn't even a "see T&Cs on other signs" at the tariff board.
If the driver doesn't mind outing themselves they can provide their own witness statement (signed with statement of truth). But I would say it would only add something if they were adamant they paid to extend correctly, and they state there was no £100 contract to be seen."To be seen" is a key phrase.5 -

I sent to both e-filing.derby.countycourt@justice.gov.uk (the one they told me to use in the letter) and also enquiries.derby.countycourt@justice.gov.uk (which is listed on the .gov website and I also successfully used this regarding a past claim over a year ago).
The email to e-filing bounced, stating the email address doesn’t exist (I’ve carefully checked several times), the one to enquiries seemed to get through, but they don’t send receipts.
Is
SIP parking sent an auto receipt for their copy.

Try "efiling" without the hyphen or, as @Coupon-mad suggests, phone them to confirm. It is bad form on their part if they gave you an email address that doesn't work!5
