I have now received the official letter stating they have applied to take me to court and I need to respond. Could somebody please advise me where I find the next steps and how to take action against this? Thank you0

Do not show personal data in any picture, no name, no address, no VRM details, no claim reference number, no password etc, I assume that is why the admins removed your picture
The 8 steps in the defence template thread explain what you should be doing , especially on MCOL
Adapt that template defence you see in that thread, only post your few adapted paragraphs below, not all of it

I was sure i’d redacted everything personal but I guess not.
So I’ve added this to section 3 and nothing else aside from the template
The defendant/driver is a close neighbour of the establishment -and its car park-with a good relationship present and had been given verbal advice by the establishment manager to utilise the parking premises on the day in question.
