I'm double-porting Lebara to Lebara (physical sims). I’ll be using a temporary eSIM to transfer my number to. Can I continue using my Lebara physical SIM until my number is ported to the eSIM?
I'll then need to wait a day to request a pac from the eSIM. During this time, can I set up and use my new Lebara SIM until I can request a pac from the eSIM provider? It' s just so I have some call and data usage while waiting to port.

Do you mean that you are porting out of Lebara to another (presumably PAYG) provider and then porting back in to Lebara to take advantage of a deal.

Yes you can continue to use your old SIM until the port starts and you can use either the eSIM with your old number or the new physical SIM with your temporary Lebara number until you port back into Lebara

Note that doing so may confuse RCS messaging if you have an Android or iMessage/facetime if you have an iPhone. But you can reset both when the final port is complete.
