    I’d assume that you wouldn’t use chartered flights on this trip, but if you do you need to be aware that you’d also need to leave the country with the same carrier due to Indian rules. As far as I’m aware, you can use two different scheduled airlines, as long as you arrived on a scheduled. 

    It’s some time since I last went to Goa but chartered airlines did make a fair chunk of the traffic.

    If you are going to India and Australia, better to book this as a leg. Break the journey in mumbai.
    There are many airlines that do Mumbai to GOA. (There are 2 airports in Goa) flight time is about an hour.
    The visa to India is very cheap. E tourist about £25. Get the double entry visa.
    also book with the local airlines for the goa trip, as it will be cheaper.

    If it was me, I would first look at Skyscanner, specifically at the 'Multi-city trip' option. I would first look for Dublin to Goa and Brisbane to Dublin as a multi-city trip. I assume there will be lots of airlines able to cater to this, especially Middle Eastern airlines such as Emirates, Etihad, Turkish, Qatar, etc. I would then look at the Goa to Brisbane flight separately as there may be some budget Australian or Asian airlines which serve this route. 

    As others have said, Skyscanner is great for research and establishing which airline offers are out there. For peace of mind, it's probably then better to book direct through the airlines' own website, although I have booked many times through third party travel agents and not had any issues.

    When it comes to insurance, it's probably best to ring them and check what your policy covers and it is definitely better to pay with a credit card.
