Second leg of long haul cancelled and rebooked by airline, 5 hour delay, can we get compensation

    There is unfortunately absolutely no way of us knowing this.
    Sure, I was just wondering if you'd been checking at the time.  The regulations require that rerouting is arranged 'at the earliest opportunity', so this should be the first available flight, but if you don't know about availability of seats on those earlier ones, it's an academic point now.

    There is an ADR that Cathay supports
    If Cathay doesn't come round to your way of thinking then that would be the next step if you chose to pursue the matter, but it's not obvious that there is any compensation due....

    Not really sure what you mean here? Have already said we left Heathrow 2 hours late, but only arrived 45 minutes after scheduled.  What other timings are you referring to?

    The other 3 flights that we could have been put on would have arrived in Bangkok 2 hours, 3 hours and 4 hours after original scheduled time (instead of the 5 hours we actually arrived after scheduled time).

    HKG-BKK is a very busy route, there may not have been seats on the other flights, you probably got there as soon as Cathay Pacific were able to accommodate you.

    What was your original scheduled  arrival time?

    Not including making up time , as that would be unknown , add on 2 hours to get the time you would have been expected to arrive.
