The OP needs to check the baggage allowances are the same for outbound and return flights, including size of hand luggage.
As for the difference between Jet2 and Ryanair - one possibility that immediately comes to mind is legroom.  Since using Jet2 I've never required additional legroom because of the design of the seats.

Legs? You want to bring your legs into the cabin? That'll be extra.

No significant difference in legroom according to Which?

Although the Jet2 pitch is quoted as a range from 28 to 31 inches, my understanding is that the bulk of their fleet is the same 30 inches as Ryanair....

    Jet2 Boeing 737-800
    189 seats
    Seat Width: 17"
    Seat Pitch: 29.5"

    Ryanair Boeing 737-800
    189 seats
    Seat Width: 17.5"
Seat Pitch: 29 or 29.5" depending on row

Some rows on Ryanair's newer 737MAX aircraft have 28" seat pitch.  Jet2's newest Airbus A321neo's have 28.5" pitch with a new model of seat that is widely reviewed online as being awful.
