My current intention is to use my unlimited data SIM through my Google Pixel 8a to receive Sky TV.
I have a 35mbps download speed. The website suggested 25+ so I should be OK?

My broadband speed is 26mbps and I can stream Sky , Netflix and other apps without problems most of the time. I get occasional buffering or dropouts if others are streaming sports or playstation gaming at the same time,0

Can't see any reason why not, although, beware of the finite mobile network capacity in your area. You may find that the network can slow down at certain times when heavily loaded.0

Also check the T&C's of the SIM provider - some say unlimited data but have a "fair usage" policy.
