3 PAYG
I'm thinking of getting a 3 mobile pay as you go SIM for the roaming which includes not just the EU but a total of 71 destinations around the world.
I initially was going to just buy a single £10 monthly bundle as a secondary SiM for data roaming for a holiday to Brazil and then ditch it.
However I see that if you sign up for auto renew for 12 months then you get 30GB of data per month for £10.
This looks like a great deal and is more than enough data for me. The included roaming is really valuable to me as well (for both leisure and business).
I know 3 have had a couple of instances of network outage of late, but I also know the coverage is pretty good for me where I live and at work (I used to have a contract with them years ago but ditched it when they took away the included roaming).
So I'm thinking of moving from my current provider to a 3 PAYG 12 month 'contract'.

I wouldn't look to using Three for more than a brief period, they are not the most reliable and are awkward to talk to. I was with Three and suffered regular outages due to them not fitting battery backup on our nearby site, whenever I spoke with customer support they said they were not aware of any issues and that my iPhone was the problem and I needed to reset the network settings. Funny how it always happened when there was a brief mains outage. No problem with EE or O2 networks here, only 3.The roaming to Brazil only includes data and calls back to the UK, not calls to numbers in Brazil, which may not be a problem to you.1

Did exactly this for a recent trip overseas. Only problem I had was failing to undo the recurring payment flags (there did seem to be more than one) so got billed for a second unwanted month. Their app is not the easiest to navigate.
Not an issue if you are intending to continue the service.
PAYG rates don't usually rise each April do they?1 -
Maybe look into travel ESIMs such as Roamless if your phone can take them - plenty of info on the MSE site1
