Hi, here is the recipe in the book. One top tip is the recipe in the book differs from the you tube video. Please don’t try and knead this as in the video 😂. Kneading a dough with high hydration is not a beginner exercise. Just follow the oiled fingers and lifting and folding in the bowl!No baking here today it’s been a long work day5

just to say that you cut at least half way through the dough so that you get 4 farls & then 'let the devil out!'Being polite and pleasant doesn't cost anything!

I watched the YouTube video when it was in the oven and realised I hadn't cut it deep enough - I'll just have to make it again won't I ha ha2 -
I made focaccia today, using 00 flour as an experiment. Didn’t realise you use less water with 00 so ended up with a batter like dough, but it tasted yummy all the same. Now wondering about using for for bread. Anyone have any experience of using 00?1

Although I do have 3m of island space to mess with, so I really should give it a go.No man is worth crawling on this earth.
