Probably the most minor quibble about this thread, but at least an easily provable one.
There is no way that anyone is going to confuse Tofu and Chicken - they are completely different in appearance, flavour and texture.
Chicken does have the characteristic, though, that once minced and cooked it can still have a meaty fibrous texture. There are many products made from minced chicken (including the ubiquitous nuggets) that show this behaviour. It's entirely possible that cheap chicken ready meals may also use minced then cooked chicken to obtain their regular cube-shaped pieces.
Quorn has announced "blended meat" products, although it's not clear if these are on the market yet.6 -

Still honestly never heard of soy & chicken mixed. As a vegetarian, I wouldn't mind if suddenly a large part of restaurant menus became ok for me! (but it's not the case)3 -
