A mobile phone number is related to one particular SIM.The local SIM that he inserts in his phone in whatever country each have their own associated phone number, completely unrelated to the EE SIM and phone number.Likewise if he installs any eSIM it will have no relation to the EE phone number. With the EE SIM removed from his phone, that number is not operational. His phone (handset) will not be affected by porting (transferring) the number from EE to another network. The EE service will be terminated when the number is ported, the EE SIM will then be 'dead'.If your husband can pass security on the EE account, he should be able to obtain the PAC (Port Authorisation Code) from EE customer service over the phone or by chat or email. Make sure it's clear which number the PAC is for - not his own EE number if he uses that to call..!Evolution, not revolution0

Please remember with PAYG Sim a call or a text has to be made every 30/60/90 days depending on the provider. When you get the new SIM and put it into your spare phone, ensure you make a call or text within the time period specified by the provider. Otherwise that SIM and its number will no longer be usable.
