Pickled onions for Christmas! Recommendations?

I once looked into it and couldn't make my mind up so just slung in Mustard seed and black pepper.

But I like to eat them straight from the jar.

You could probably add to the bottled ones as they are basic.

I had a look in my cupboard, had mustard seeds, cloves, cinnamon sticks szechuan peppercorns so they all went in.
Made two jars, one just have the spices for 24 hours then removed the other I kept everything in.

Pickled onions were a great favourite of my grandmother's, I recall she made her own with just salt and brown vinegar. She would stick them in our cheese sandwiches to add interest, they certainly did!
