We have also received a reply today following our correspondence last November.

Interesting that they don't even bother to give you a full name when writing. "Skye." Lol. Probably made up.
They have completely ignored the question about VAT.

I assume that we just wait for the court papers now as they have stated that, "we will not accept any further submissions from you?"

Correct,  the only item of note after any reply to an LoC response is the HMRC aspect mentioned by Le_Kirk
