Not my understanding, if the eSIM provider allows additional credit to be added after the initial purchase then that's fine, at least that's true on my Gigago eSIM. Not really useful unless I return to Vietnam.
What you can't do is remove/delete the eSIM from the device and then re-install it, the install (QR) codes are single-use only.
Most phones allow you to store many eSIMs, moving them to be active as required. There may, of course, be usage requirements to keep the eSIM active, just as with physical SIMs. I've got Firsty, and whatever the freebies from Revolut and Nord are called, all stored on my phone and they certainly allow top-ups.1 -
I have had a look at gigago and it seems that Vietnam is the only country without "no topup allowed". I have checked a few and all have that warning. In any case they don't seem to do EAU.
I had looked at firstly, but it is very dear as it charges by the day. Having to go for month it is not really good value, unless they have benefits I don't know about (I don't even look at the free option).0 -

They don’t always differentiate between the eSIM and the plan. It’s not clear whether it’s the plan that needs purchasing again or an eSIm. By top-up they mean adding money to the account rather than buying a plan outright. But they do cover UAE1
