Lebara roaming issue

Sorry for long explanation but I really need some help.
I spend 3 months of the year in Greece. One block of 2 months then a month or 2 gap then another month. The 20 gb a month I get on my plan has worked great for me, until now.
I use data for messenger and whatsapp mainly to communicate here and a bit of SMS plus a little of my included 100 international calls and the occasional UK call.
Got a message saying because I didn't use enough/all my data in UK it'll cost me £200 per GB 15 days after this message plus other amounts to make or receive calls and text from UK. Can't afford that!
This will therefore realistically leave me with 4 days no service at the end of this trip. I only need 5 GB for that period but it's vital.
I don't have any access to wifi ( middle of nowhere) here and really need data to check my flights, book taxi etc so losing that right when I most need it will be a big problem.
I'm not super phone savvy, have moto edge 40 neo which does have esim capability but I'm not confident I can set that up correctly whilst I do still have lebara data.
Can anyone suggest:
1. An esim I can buy for those last few days which is idiot proof to set up?
2. Another UK service I can change to when I get home which simply lets me use my plan without this dependence on UK data usage?
Happy to pay for extra data when needed.
This was possible with vodafone but I switched from them to Lebara because twice vodafone extra data I bought didn't kick in leaving me then with no internet access to sort it out.
I ended up half way up a mountain with no way to communicate and the booked taxi to airport didn't arrive so missed flight to Athens and the connecting flight to UK. Cost me a fortune in new flights plus the cost of prepaid Athens hotel booking.
Can anyone help?

All UK networks who provide inclusive EU roaming stipulate a fair usage time limit for its use. Lebara enforce this in the particular way that you have encountered. Others don't seem so strict in my experience, so switching provider may be useful for you in future. For your last few days in Greece there are several eSIM services that you can use, supposedly not difficult to install, you can find recommendations in other threads or replies here. For spending that amount of time (or less) in a country I would always obtain a local SIM, to use in combination with a UK SIM in my dual-SIM handset.Evolution, not revolution1

eDicky: Thank you for the response. I checked out some esims. Some are not bad at all price wise. Others ridiculously pricey. The reason I asked for sound specific recommendations is because if it doesn't work I'll have no internet access at all to find another.
I often get local sim when away for any length of time elsewhere but Greece is a nightmare. You have to do a mass of paperwork in a shop and take a 30 euro a month 12 month contract, provide passport.
Not an option here really unless you're in Athens and can go to some of the dodgy places round Omonia offering rather ropey data SIM so nope, and anyway I'm very remote which is why this is so vital. When I get back to UK i probably will look at other providers.
I got on chat with lebara this morning. Basically you have to put £5 in a top up which you can't use it just keeps the service open then pay top up for usage. Their info on costs is badly displayed hence the horror of it looking like a massive £200 per GB. It isn't.
It's only £2.00 per GB data plus various amounts for texts, calls and receiving calls. That's absolutely fine. So panic over. Thanks again for trying to help and I hope this info is useful to any other lebara users looking for answers.Living on Earth can be expensive, but it does include an annual free trip around the Sun.1
