Airlines are not obliged to pay EC/UK261 compensation if a cancellation is due to extraordinary circumstances beyond the airline's control. A passenger sickness would be deemed to be beyond their control.
Assuming this was 10th July? If so the outbound from Edinburgh was indeed cancelled. Have they elaborated further? These things can often be complicated with a number of factors. It may be that the sick passenger situation caused a delay that then meant there was a further ATC delay that meant the crew wouldn't be able to operate due to duty hours or similar.0 -
To further explain what happened on the day; an earlier flight operating on your aircraft following a medical emergency. Ultimately and in the case of this flight, the delays would have pushed your flight past the curfew, so we had no option but to cancel your flight. We do take reasonable measures to avoid delays and cancellations to our flights by having replacement crews and spare aircraft available in our network. However, in the circumstances, these options would not have helped as your flight was cancelled.

Night curfew seems to be an issue easyJet are citing in a couple of cases seen on these forums lately. Many airports do have night curfews although I don't know if Bodrum and/or Edinburgh do (most UK airports don't)
It would be a valid defence if the medical situation delayed the flight such that it couldn't operate due to a curfew.
You could ask easyJet for more information on which curfew they missed. Or if you wanted to escalate you could proceed either with ADR or Small Claims Court, in both cases the airline would be required to submit evidence to substantiate their claim.1
