How do I fit these two hoses together?

To explain, I bought this house from a builder about 10 years ago who had built it for his family to live in, which they did for the 7 years before me. That being the case, it seems he cut all sorts of corners!
Old and new fridges do you mean?
Old: Maytag GC2225GEKB
New: Samsung Series 8 RS68A884CB1/EU
To be honest, whilst it is annoying not having a tap to turn off the water to the fridge, I've never needed to do so in the 10 years I've lived here, so if I can get the whole thing connected then I can live with the lack of a tap...
In which case, with the mains off, you can cut that pipe, shove a support insert into each pipe end, and slot them into an isolating valve.
And then turn your mains back on, and start to live again.

Silly question, but how can I tell the diameter if I can't get to the inside of the pipe? That metal fixing on the end won't come off by hand - perhaps I need to cut it off? (I note that's what you suggest in your next sentence anyway). But looking at it, 10mm sounds right. However the white pipe is definitely nowhere near 10mm, I measured the inside as best I could and it seems to be about 4-5mm, god knows what size pipe that is (EDIT: OUTSIDE diameter is about 6mm, so I reckon it's a 1/4 inch - I didn't realise it was measured from outside...). I should be standard though as that white pipe is the Samsung kit. Anyway, it's nowhere near 10mm, so how would that work with a 10mm 'plumbing pushfit'?
(Sorry if my questions sound dumb, I'm definitely not a plumber, I just thought this was going to be really easy).

The fridge pipe is probably 1/4 inch - so you need a 1/2inch to 1/4 inch push-fit reducer (probably). Maybe 3/8 to 1/4.1

Ok, I'd wrongly assumed some things...The plumbing shown in Pic 7 looks like 'normal domestic plumbing' using 'plastic push-fits'. If so, the pipe will be fairly rigid, which means that this pipe is not the same pipe in Pic 6 that you see coming through the wall - in fact that Pic 6 'pipe' is not pipe but 'hose'. It's flexible, and has a purpose-made fitting on the end which presumably fitted the Maytag. I suspect it was supplied with the Maytag, and that fitting is likely to be 1/4" (6.35mm) as shown on page 10:In which case, it is only designed for that model, so whilst you may be able to connect to it, you'd likely be better off getting rid, and going back to where this hose is teed from the normal domestic plumbing.There will be a point where this occurs, and almost certainly you will find it if you look properly! And it will most likely have a 'tap' on it to shut the water off. Where does that wall go - what's behind it? Have you looked inside every kitchen base unit to see if there's a mysterious fitting in there? Under the sink unit? Are you sure?!2

That brings us to the Samsung.This shows the connection on the fridge itself? (Ah, it's the separate filter?)And that white pipe also came with it?That looks like 'rigid' pipe, so will be similar in material to the domestic plumbing seen earlier - but smaller diameter.So, how does that pipe connect with that fitting above? Does it just push into that grey collar and 'catch'? (Ah, yes, it almost certainly does.)What outside diameter is that pipe?1

Pages 36-ish onwards suggest that the supplied pipe is rigid, thick-walled, and does not need support sleeves inside them Ie, no mention of 'sleeves'. (See the 'domestic' plastic pipe in pic 7? That must have support sleeves fitted, fyi.)To fit it to the filter cartridge, you cut the pipe end straight and cleanly, make sure it has no burrs, and you push it into that grey end fitting of the filter. It will be grabbed and held in there. To release, you push that grey collar inwards into the filter, and then you can pull out the pipe. To prevent this happening accidentally, there is a grey U-clip which goes behind that collar to prevent it from being pushed in.
That's my best interpretation of the pretty weak instructions.Can you find all these bits? Cool.The kit should also have a fitting which looks a bit like a washing machine connector, and the other 'house' end of the hose goes there - you then connect that to your supply tap (when you find it), as I suspect the most common fitting on that tap will be a washing-machine type.Really, to try and connect this new Samsung's rigid hose to the Maytag's old flexi hose is not ideal, tho' it can be done - you will need a suitable connector for that hose end fitting. The sensible thing, I think, is to trace that old hose, and find out where it's going. Then start anew.

Right, an update:We went to a couple of plumbers' merchant's, neither could help us, both said it's a weird size pipe etc. THen we went to a heating specialist, who was incredibly helpful, tried 5 or 6 different things from his storeroom, and eventually sold us the white plastic part below. He did say he can't guarantee it will work and won't leak, but it's been 6 hours so far, and no problems (touch wood).
