Package holiday sale query

We went into a store to book a holiday last week, we looked before we went and the holiday was coming up as £3500. The assistant did a webcheck and said if we can be flexible we could save over £1000 this bought the price down to £24?? By the time she got into her system to book the holiday this reduced to just shy of £2k. She did say she'd not seen a holiday reduce so quickly but does show just how quickly the dynamic pricing changes.
Make £2023 in 2023 (#36) £3479.30/£2023

As others have said, holiday and flight prices are dynamic and companies use sophisticated revenue management systems that take into account a whole load of factors such as supply/demand, booking levels, website hits, special events etc.
You booked during a sale and did get a "sale" price on the day. However since that time other factors have meant that the price has been changed and in the case of your holiday it has fallen, some holidays may be the same price, others are more.
Crux of it comes down to Jet2 said it was a sale price. But did they say it was the lowest price the holiday will ever be on sale at? Or did they offer a price guarantee? Without anything like that I don't think you'll have any recourse. It's marketing - have a big sale over a holiday weekend! A bit like furniture shops.
I do see your frustration, it happens to everyone. That's why plenty will say "book at a price you're happy with and don't check again". Sometimes if the holiday falls significantly in price, it may even be worth cancelling and losing the deposit and rebooking - seen people on here doing that before.
If you do feel you've been misled you could complain to the Advertising Standards Authority. I'm not sure if single consumer complaints carry the same weight - but a couple of big banks have been successful in having a Nationwide TV ad banned as reported in the press today.0 -

they have X number of holidays ti sell
They neede more sales so reduced them.
Not enough people bought at that reduced price , so they have reduced it again to get more sales.0
